Today I defrosted one of my three freezers. I thawed out four quarts of winter squash, puréed it, and it is in the dehydrator.

ketoriverfarm I'm curious about what you will do with the dehydrated squash? Some people eat it like fruit leather. Will you add it to soups or what?

Yes, I will use the dehydrated squash in soup. Since I do not follow a recipe, here are some rough directions. Cook together till tender.... 4 cups chicken broth 1 cup of dehydrated squash onion garlic salt and pepper seasonings can be curry or marjoram or cayenne use stick blender to puree then can add cream, half & half or milk or coconut milk or even cream cheese reheat, but do not boil. sometimes I sprinkle coconut and peanuts on top.

I have 3 apple trees here but I scour the old fence rows picking up apples in the fall for cider. There are apple trees all over the hill sides here from old homesteads and orchards that now grow wild. I also transplant apple starts and graft different old apple varieties we really like along creek banks. The more variety the better the cider. Some old varieties keep better than modern varieties....James We call them 'road apples' That is NOT what I call road apples, lol!

13 pints of spinach today. These new lids, however, look odd and wrinkled as i took them out of the canner. They are sealing, however, but with a load bang instead of a pop. I am not sure where these came from. Wish I did!

I canned 14 quarts of dog food (I'm starting cleaning out the freezers to make room for strawberries). Also 4 pints of chicken and three of chicken broth. There are about two more pints of broth, but I used the smaller canner and didn't feel like running another batch this evening. I'll can that tomorrow.

I canned 7 quarts of chicken stock (two went in the fridge to enjoy soon, as they didn't fit the canner). I'm glad you are all reminding me of the strawberries I had better pick this week! I don't grow enough at home, so we go to a you-pick farm that we like to support. They usually give up on strawberries around June 1.

2 quarts and 2 pints of rosemary chicken with potatoes and green beans 2 quarts and 2 half-pints of BBQ chicken 1 quart of plain chicken in broth
Tomorrow, I'll can up the stock from the bones/skin - I've got it chilling in the fridge so I can skim the fat off.

I'm setting up to can about 20 pints of Mexican Chicken soup. And I'm making a huge mental note to can my own "Rotel" type diced tomatoes and green chilies this summer. I looked at the grocery store and it was $1.19 for a teeny can. Wow! I guess I get pretty spoiled by growing and canning my own- I had no idea how much that goes for at the store. I'll also remember not to complain when I'm up to my elbows in tomatoes and peppers in a few more months.

A co-worker brought me a bunch of cucumbers that her husband grew, so I am making a couple of the smaller ones into two half-pints of pickles to take back to him.

okiemomof3 I found this recipe on line. I'm going to taste sample it first to see if I like it. She modified it to water bath, but I'll end up pressure canning most likely. I usually follow the Ball Blue book for tomatoes and jalapenos individually, then toss them into any recipe that calls for rotel. We are trying our hand at canning cheese now. We have 6 1/2 pints of cream cheese and 1 half pint of cheddar cheese melting now. when melted we will can...kind of excited as this is our first attempt at canning cheese. Thanks to all that shared on the tread about doing this.

I canned some chicken curry, whenever I cook a dish I try to make a double or triple batch of whatever I am making and then can some for quick meals. If the dish has flour, rice or pasta I leave it out and then add it when I make it, like chicken a la king, pot pie filling or soup.

You need to get him some old Tattlers, then he can tighten them all to his hearts content! Just came in from picking 24 cups of strawberries and getting ready to put up some jam. Jumped online to order more Pomona pectin (I'm not out, but I'm getting low) and thought I'd check in before I started. 9 pints & 3 half-pint strawberry jam!
