7 Quarts of Dill pickles and 12 pints of cucumber relish- and I haven't put a dent in them yet!!! we are drowning in Cukes- I also have 3 gallon jars of cukes fermenting into dill pickles on the counter-
and 14 pints of coleslaw..
the season is gearing up!

We are nearly done with vegetables, 12 pints Swiss Chard this morning. I am done with tomatoes, I am, I am. Twice what we need or more. Hate to see them go to waste. I have 2 bushel ready for produce day today. Lots going to the chickens, fresh salsa, sliced, lots of pasta right now, stewed, tomatoes in casseroles. Been a long tomato season here, still early. Hate to get tired of them but them and zucchini can get kinda old after a while. I guess with the greenhouse and hoops, then so many all summer, we are saturated....James

Canning chicken for the first time today. 4 pints to see how it goes and do a taste test. Plus 2 quarts broth with meat for future soup. I've canned beef chunks,bacon, and burger but chicken has been readily available and cheap so I just haven't ever canned it. When I saw the prices soaring for whole chickens this summer (we just have laying hens) I decided to can some,but it's taken this long for me to hit a good sale here.When a sale starts they vanish the First day. Now the freezer is packed and I'll do 8 more pints (I do pints because there's only 2 of us)....in the near future too.

Finally had enough of my cukes to do 2 pints and 1 quart, as well as store bought blueberries to make 2 full pints jam. Seems crazy as last year at this time I was floating in tomatoes, zukes (nary a 1 yet!) and beginning to get cukes.

28 quarts of spicy dill pickles. We actually did this on Wednesday but I forgot to post it here. First thing we've canned this season. They might actually last a whole year, since we'll be teaching our son and his wife how to make pickles next week. Hopefully they will can enough of them and I won't have to put up with son's puppy-dog-eyed begging for more pickles. We made twice as many quarts last year and they were all but gone within 7 months.

9 pints of peas and snap beans mixed. Can't count the time that my wife has opened both a jar of peas and snap beans for a certain casserole. Since we already have plenty of each canned separately, saw no reason to not make up a batch combining the two. Used the pressure canning time for the peas and everything looks great in the jars.

Hey hobbitlady how did your canned chicken turn out? And @jwal10 I cannot believe that you are done with tomatoes! The ones in my greenhouse have just barely started ripening. I think I've picked less than 20 romas so far! So now this begs the question- when did you transplant those tomatoes into your hoop house? Pretty sure mine went in mid to late April. I'm curious because it's my first year growing like that. I'm wondering if I could get mine started even earlier next year. My green house is not heated, though.

Oh my canned chicken looks awesome and I pre-brown mine so got a fair taste before canning but it will be a few days before I use a new pint in a meal. I think I'll be thawing more frozen to can Very soon! he/he On long meat pressure I've noticed lids look deeper than fruits,etc and all mine look tight as can be. Very happy so far.......... Canned 2 pints of plum sauce/sorta stewed last night.Will probably only get 4 or 5 pints total. Most blossoms froze in a late freeze and we like a fresh one or two a day so it's a lean year. I'm just happy plenty of apples are on the way........

I planted my tomato seed Feb 15. Transplanted them into 24 big black pots April 1st. We had nice warm days in April, they were acclimated and into the hoops by tax day, blooming nicely, setting tomatoes. After set, I withhold water until they just start to wilt, then water 1/2 gallon/pot every other day. Lots of ripe tomatoes by June 15th. 16 Early Girls are all picked off. 8 Better Boys are 2/3 done. 2 sweet 100s just keep on producing until frost. My winter greenhouse tomato seeds were planted July 15, directly into the 6 big pots. They will be 18" tall end of august, they will be in full bloom by mid September, go into the greenhouse with nice set, before first frost, around October 1st....James

Two runs of green beans today. I love these purple pod beans! Very easy to see on the plants, and they turn green when exposed to heat. Very sweet and tender, they're happiness in a jar.

Hi Wally, actually these beans are a regular green snap bean called Purple Dove Snap Bean, that's purple until cooked. If all the pretty purple flowers on these plants yield a bean, I'm going to be buried! It's really a delicious one, and one I'll return to year after year. One gallon of refrigerator garlic dill pickles - DH patiently waiting to eat the first one. I also got 6 quarts dill pickles and 16 pints green beans done yesterday.

So far.........5 pints Dilly Beans. Icing/salting the cukes right now for more pickles. DH thinks I'll get about 11 pints, we'll see! He sort of took over the pickle canning, he really enjoys it. So I had to really go back over making them, directions-wise I mean! Just coming in too fast for him to make them all after work. Making sweet slices out of these.

Not canning per se, but the crock pickles are done in the crock and are now jarred up and in the refrigerator. We sealed a half gallon jar using a foodsaver lid attachment. That way they keep for a lot longer. Of course dh has eaten three of them already from one of the three quart jars we didn't seal...

Prepped, peeled, cut, mixed, cooked, and canned 21 pints salsa, 8 pints apple jam, and 17 half-pints plum jam. I'm glad it was raining, but that means I need to get picking early in the morning before stuff splits open from the rain, and do it all over again!! It's only 10:20, but I am so beat it feels like 10:30 to me.

With 14 pounds of peas on hand this morning, couldn't see just canning them as is. Did the 50/50 mix with snap beans figured by weight, 5 pounds of each. Beans were cut only about ½" long to take up less space. This time, added diced cipollini onions at a rate of about half of a 2" bulb per pint. Filled 18 pints and still have about 9 pounds of peas left. Wish that the carrots were ready for another great mix!

I canned up 12 half-punts of pickled jalapeños and 7 half-pints of cowboy candy last night. I stayed home from work today and will probably can up a canner full of black beans as we are short on them.
