This was an interesting video featuring a steak chicken restaurant in NY city. They showed chickens that were 120 and 130 days old, different types. He used different ways to cook them.
I wish I had chickens. Do you have a preference on taste of the kinds of chickens you raise?

I hate to say it but despite free ranging my chickens I notice no difference in taste. Taste in the eggs yes, the birds themselves? No.

I thought my best friend who raises chicken told me her chickens were only 45 or 60 days old and if she matured them further, they would hobble because they were only meant-bred to be meat chickens. I've never actually eaten 'the best chicken', I'm thinking it is cooking technique to keep them moist and make a nice 'au jus' or gravy.
Do you think this kind of video is just a marketing technique? I'm not convinced it is more than that.

Speaking of 'chewy': I recall reading about a project in Haiti to modernize chicken production. The traditional home grown free-range Haitian chicken was replaced with fast-growing breed kept in confinement and fed properly balanced feeds. The project produced lots of tender young chickens ready for any supermarket. Unfortunately, when cooked in traditional Haitian style, those tender young chickens dissolved into nothing. The Haitians were not pleased.

The taste and texture of home raised Cornish cross vs store bought is quite different. As for eggs, I cannot tell the difference in taste, however home raised eggs are much more colorful.
