The Blender Ketchup has SO MUCH sugar, I'd be afraid this would taste too sweet and well, it can't be that good for you anyways.
I'm leaning towards the last recipe, the Tomato Ketchup. I pulled a blog recipe for ketchup off the internet yesterday and it was nearly the same as the Tomato Ketchup recipe, so I'm still leaning towards that recipe.
What about your ketchup recipe? How do you and your family like it? How does it compare to these with regards to sugar and vinegar?

I just made a 24lb of toms into ketchup, the recipe I used had 3cups sugar and 3 cups of vinegar. 50/50 seemed right, less sugar than vinegar would make it very sour I think.

I thought, at the end of today before I put it in jars to can, I'd taste it. But, I like sour and DH and DS may not like it as much, so I'll make an effort to have them taste it too. I can add more sugar but I can't take it out!

There are a lot of vegan ketchup recipes that don't use sugar. These recipes generally use ground dates, maple syrup, or honey.

This one is called Honey Ketchup: www.ovenloveblog.com/homemade-honey-ketchup/For the equivalent of 24 lbs of tomatoes, it uses 1 and 1/2 cups honey and 3 cups vinegar. I'm definitely going to have to have my taste testers present.

Are these all waterbath canning recipes? If so what is the headspace and water bath time?

1/8 inch head space and 15 minutes in waterbath boiling. If you aren't reading the recipes you miss the spices and procedures. My house smells like tomatoes.
