Would like to make them. Have always made them with corn meal. To avoid gluten, what else can be used besides corn meal?

Ground up oats makes a good filler.
I used to use saltines for the filler and breading. I haven't bought crackers in eons. We use toasted breadcrumbs for both with good results. Do you eat gf bread?
Recently saw a recipe where they used crushed up cereal. Corn flakes more specifically. I bet gf chex would work well too.
Crushed potato chips would be a good option too.

What about potato flakes? They would hold everything together, especially if you used an egg.

Used to use bread crumbs, crushed crackers, and Panko.
Since I've gone low-carb, I've used coconut flour, as well as almond flour. I can see that oatmeal would be a good binder as well, and I think I'll give that a try next time.

Honestly...I don't know I never made them before moving here ... Perhaps people here often also sever them with a potatoes salad that adds hard poached eggs? I never thought about and now I feel stupid for not asking. I will ask though. I hate fish personally...but I cook it for the family..

DW is not a fan of fish of any kind, as I do a lot of our cooking around here, so when I cook fish for myself, I cook something else for her

I use an egg. Whole egg. An egg is a complete food source. Also, because of the biotin, you should not really eat just the whites, you need the yolk. Don't worry about the cholesterol, again an egg is a complete source and the cholesterol is balanced.

It has also been proven that the cholesterol in your food does not have as big an impact on your blood cholesterol as previous believed. Got that info from my cardiologist so I do believe it.
