I made a big pot of brown rice and put back a pint for DS plain. DS likes spicy, me too....DH not so much but he's not here today.
Spiced up Rice 6 cups of brown rice cooked
A little oil Chopped onion chopped up carrots saute until cooked
Add minced garlic couple handfuls of frozen peas 6 tomatoes chopped chopped red pepper tsp of cumin, black pepper, chili powder, oregano, and some salt
Get that hot and add the rice.
Refried beans to follow.

Refried beans
6 cups of cooked pinto beans
Cook an onion finely chopped in lard/oil. Add two minced garlic cloves tsp of ancho chili pepper, oregano, black pepper, cumin, and salt to taste.
Add in the pinto beans w/liquid 1 cups of broth or water.
Heat, then when they are all hot and some of the liquid is boiled off, mash them a little leaving some beans whole.
This all came together nicely and I have taco meat and tortillas from the freezer, red salsa from last year, green salsa from yesterday. I think I may have made a mexican buffet.
