Another use for zuchini: we love it in our chili!

I love to use excess zucchini as targets. A couple of my kids who *think* they hate zukes wouldn't mind if we did that. LOL!
They'll eat those brownies, choco cake, quick bread, muffins, spaghetti, fritters, "apple" pie filling, "pineapple" cake, salsa, pickles, relish all made with zukes. They'll gobble it up and ask for seconds and thirds...just so long as you don't mention the dread Z-word.

The zucchini pineapple we made did not taste like pineapple! I've heard others say that too. We don't use pineapple straight out of the can. We bake with it (cake, muffins, pie, over a ham, etc). Perhaps that's the difference?

Our main use was upside down pineapple cake. I don’t know...I prefer to can fresh pineapple now. And no zucchini around here. I was always a yellow squash person.
