My mom had a frozen quiche, she would freeze it before baking. It was good. So with the eggs mixed with cream or whatever, it freezes okay.
After cooking, I dunno.

I have tried to freeze an already baked quiche, it didn't go well. The eggs were rubbery, the veggies were soggy and the crust was weird. It might be different, as feather, said, if it isn't baked beforehand.

I've had best luck freezing a crustless quiche before cooking it. Crusts seem to get soggy and freezing it after it cooks - I have the same issues Motherhen describes, rubbery & soggy.

This is what I do. I freeze pie crusts. I freeze quiche mix. I got the idea from one of the manufacturers I represented (Rich Products). They sold a frozen quiche mix that came in a milk carton-looking quart container. I am careful on what items I add to the mix. I save the feta cheese, cherry tomatoes, etc. for when I thaw to use. It makes it handy for Hubs to have an easy meal if I'm not around....or if he wants to start dinner when I AM around.
