Does anyone make freezer relish? I make freezer pickles, but I have never tried freezer relish. I wondered if I could use my regular relish recipe and freeze it or if it would be mushy. Is freezer relish cooked less?
I googled (and googled and googled), but didn't find anything definitive, mostly recipes for pickles and some for zucchini relish, but I want a simple pickle relish like I make and can.
thanks.

I don't make any freezer relish, due to lack of freezer space.
I've noticed, for our family, if I get the brine right for a sweet sour pickle, that's the one we like and changing the sugar to vinegar ratio will put us off on pickles or relish made. So I stick with the ratio we like.
The same holds true for the dill pickles, whether we like it or not, is dependent on getting the brine right, salt to vinegar.
I've been known to clear out 20 jars of pickles if they aren't one's we like, which is a terrible waste.
If I were you, I'd use the recipe using brine that we like. For the freezer, cook it very little if at all. But yes I'd expect it to get less crisp due to freezing. Cooking breaks down the cell walls that give the cucumbers/zucchini their crispness, and freezing does that as well.
