This recipe has been in my family for at least 4 generations:
Chow-Chow Relish
4 quarts diced green tomatoes
1 quart diced (or ground) onions
3 red peppers diced
Put tomatoes, onions and red peppers in large container, add 1 cup pickling salt and cover with cold water. Let stand 12 hours (I've let it go 24 hours with no problem)
Drain and rinse with cold water to wash out salt. Put into large pot, and add:
1 quart chopped, peeled apples 3 cups vinegar (I use regular) 3 cups white sugar 1 tbsp. turmeric spice 1 cup pickling spice (tied up in a large spice bag)
Bring to a boil, then turn down heat to medium, keep stirring now & then, let simmer for 45 minutes.
Remove spice bag, fill hot sterilized jars and put on warmed lids & rings.
Grandma never water bathed hers, and I don't either. Have been making this for years.
