30 days ago, I split, seeded and cored my Ghost, Apocalypse, Reaper, and Pepper Fish peppers..... They are still 'tacky, gummy, not crispy dry'. Is this as dry as they will get? I want to put them in glass jars, but if they are not done drying, I don't want them to mold.

If you are just air drying, they may not get dry enough. You could put them in a dehydrator at a higher temperature, or put them in the oven but the low temperature of the oven is 170 deg F which is a bit high. You can put them in your car/truck on a hot day and that will drive moisture out of them.
They need to be crispy.

How are you drying them? If sun drying they may be reabsorbing moisture overnight.

When I first split the peppers and put them in the room; I shut the door and went to work. 12 hours later, when I got home, I opened the door (this is a 9x10 room, hardwood floors) and the beautiful floral aroma immediately hit me. I walked 4 feet into the room, and started choking from the capsaisan in the air. One of my son's friends (who is a hot pepper pro) ate one of my reapers.......6 min later he puked, 4 hours later the burn was 'managable' and his bathroom experience the next day was........well let's just say "uncomfortable'. He said it was THE hottest pepper he has ever eaten, and he has eaten A LOT. I am afraid if I put them in my dehydrator that I will never get the smell out, and if I put them in the hot Jeep, I won't be able to drive to work!! I might find a way to put them in a bug proof glass top box and put them outside. It's gonna be smokin' hot this weekend.......

laurazone5, a box with a glass top sounds GREAT. When I read your post title, I said to myself, I sure hope she is doing this outside. My dehydrator sits outside, in an open cabinet dh built, covered in a tarp to protect it from rain. Onions and garlic need to be done outside too.

I have some unreal HOT peppers in our garden. They were labeled wrong so I have no idea what they are. When my son & I first tasted them, we immediately spit them out. Gave them to a good friend who loves hot, he roasted them put it on a sandwich, he, too, spit it out. He calls them peppers from He--! I did make a couple batches of salsa with a few, that was okay. I like to dry peppers but don't think so for all the reasons above. I did put a few down some prairie dog holes. We are planning on making hot sauce this weekend and the remainder will be gifted to the Prairie dogs.

laurazone5, how did it go with drying the peppers? I'm in the process of getting carrots ready for dehydrating tomorrow and I was thinking of you on this thread.

My son had a hot sauce book and we found the HOT peppers: Scotch Bonnet. The remainder went down prairie dog holes. It was 10 degrees this past week...working out of buckets in our back room. Left the pumpkins out covered...they seem okay.
