How do you tell if acorn squash is ripe enough to buy?

If they are in the store, they are ready. They will be dark green with a yellow/orange spot, the skin will be hard. I've also seen some yellow/green ones, same shape but different color at some road side stands, maybe a different variety of acorn.

What I used to do, was trim the top and bottom flat only a little then cut in half horizontally, scrape out the seeds. Then bake cup side up, on a sheet pan, put in some butter and brown sugar and a touch of salt.
Now what I do is take off the stem and cut it through top to bottom because then it will sit flat laying on its side. Scrape out the seeds. Bake it cup side up, with a little water in it, maybe a little low salt soy sauce.
Squash seeds, are edible, so you can bake those too if you like them.

I viciously stab the squash a couple of times, right to the center. Put on a baking sheet or foil, bake. The stab allows steam to escape, yet the squash will stay moist.
