The leaves on the beets I just bought are way past the point (spotty), but the stems look OK. I'm going to wash, chop and add to a saute'. I'll add some daikon leaves to the kale and mustard tops this week, too. But it got me thinking: am I just being goofy to build dishes around this stuff? I compost everything green. Can't keep chickens or larger farm critters in the village. Thanks.

I know I would eat it, though I have no idea how strong the daikon leaves might taste. Greens are so good for the body. They create nitric oxide for the lining of the veins and arteries (the endothelium), which heal it from inflammation and help to rejuvenate it. The nitric oxide then helps the veins and arteries relax and expand and constrict as the body need them to. So count me in. I just ate a big bowl of kale and arugula. feather, provided such good information above. When we find ourselves not being able to eat our fresh greens (beet tops or kale or spinach) right away, we freeze them. Then, we will add the frozen greens to a smoothie later in the week or so. It is better, however, to eat the greens fresh. It has something to do with the mixing of your saliva with the greens while chewing. feather, could probably explain why.

Okay Cabin Fever, you know I've been reading and listening to doctors talk about all this, for at least an hour a day since January, sometimes many hours a day. I've been trying to figure out who to believe--which of course is everyone's plight in America. Two plant docs (Greger and Popper) believe the bacteria in the mouth is also in the stomach, and it mixes with the greens when you drink a green smoothie. So those two plant doctors drink green smoothies daily. Then two other plant docs (Esselstyn and McDougall) believe that the bacteria or enzymes in the grooves of your tongue have to be mixed around while chewing to get the most of out the greens. These two don't drink smoothies often. I respect all these doctors but it creates a controversy. I've done it both ways. For months, using green smoothies and now for months chewing my greens. I can't honestly say one is better than the other. It's more important just to eat your greens than how you eat them. Kale, arugula, beets, leaf lettuce and head lettuce, all kinds, broccoli, cauliflower, asparagus, collards, mustard greens--I've probably forgotten a few.

The beet stems were lovely in my saute'. I also had onion, garlic, mushrooms, and a TBS of hashbrowns hanging around.

Just to confuse the issue a bit more (or perhaps, it's a compromise), I have heard that if a person drink their smoothie slowly, like over a 20-minute period, and keep each sip in your mouth for a few second rather than swallowing right down, will give you pretty much the same effect as chewing fresh, raw greens. What I do, is take a sip, swish it around in my mouth, and chew, and then swallow. Yeah, I know crazy.

Cabin Fever, what you say is true, I'd heard that for a number of reasons. One is for the bacteria or enzymes, so don't brush your teeth or mouth right before your smoothie. And the other is so that you don't get a natural sugar rush from the smoothie, as a quick drink down of a smoothie isn't good for your blood sugar. Then, because it is acidic to some degree, give yourself 30 minutes after a smoothie before brushing your teeth so the enamel on your teeth has time to stabilize. Not crazy at all.

It's called the how to keep my husband healthy project. 6 months since the mild heart attack, and today he goes for his second lipid panel. We're both pretty excited about it and hopefully will continue to see good results.
