I pulled everything out of my freezer today, and found five bags of last year's green beans at the bottom. There's a fair amount of ice in them. There are a few other year-old fruits and veggies, but no in the same condition. Do you have ideas for using those up? I don't care for green-bean casseroles, and wouldn't want to put too many green beans in a veg soup at once. PS: My sister is cooking T'giving, so it wasn't nutso to sort the freezer . I only need to take a pie.

1. Wrap in bacon and roast.

When fruits or vegetables are in bags with a little air, the water comes out in crystals, like with blue berries, or beans, or strawberries or peas.
I usually wash off the ice crystals and consider the fruit or veg to be a little dehydrated. I put them in water, or cook them in water to rehydrate. Then use them as usual.
Dh uses a lot of frozen blue berries. They are often full of ice crystals. He washes off the crystals before using them in oatmeal.

We rinse as well. With green beans, I always fry a couple pieces of bacon in the bottom of the green bean pan (just to get fat, not to get bacon crispy). Then I add garlic and green beans. Saute until beans are done.
