A jar of pear jam that's been in the fridge for a while has a thick, sort-of rubbery, translucent layer on top. A friend made it. It's very high sugar. Is it still safe? What is that? It doesn't look or smell like mold. Thanks.

As for myself, I would just scrape it out and use what is under it...may just be overcooked...for years, we mixed sugar with betadine and used it to pack deep wounds in nursing...sugar helps prohibit the growth of some bacteria....jam would have lots of sugar in it....

As long as it hasn't turned a nasty color, or grown hair, this would be clues to me..
One of my favorites is as dish for the foam skim off and pot dregs when making jam.. Tastes just as good to me.
