I found an older thread with this title, but since it had last been updated in 2015 I figured it was time for a new one.
As the basil plant continues to produce, I've been making small batches of pesto using my immersion blender set. 6 more pesto cubes joined the dozen I'd frozen previously. While dh likes maybe one pesto cube added to a pan of roasted tomatoes, he's not much for spaghetti with pesto as a side or for an entree (unlike me). I should definitely have enough pesto to keep both of us happy for the next year by the time the plants are done.
Beans aren't coming in very quickly, but I've been able to freeze two quart bags of them so far. Hoping for a lot more before summer is done.
Now that we'll have two chest freezers, I'll probably do more freezing of produce than I did in previous years - I'm thinking this year all the beans will be frozen instead of canned. Well, except for dilly beans, of course!
It's a start.

Going to freeze blueberries today. Picked two pails yesterday at The Blueberry Patch in Mansfield, Ohio. Probably going to get around 22 pint bags of berries.

I shredded zucchini to be used for cookies, muffins, bread, pasta sauce. Hubbers loves zucchini baked goods. Froze half dozen bags today with more coming in future days.

I didn't freeze anything today BUT I did defrost the freezer! I always try to do it before I start adding...a little slower this year but glad to have it done and I didn't really find any great surprises.

Kale. The kale plants are going absolutely crazy and there's only so much kale we can eat in salads or as kale chips. So I'm taking a chance on freezing some. I took a frozen piece out today - it thawed almost instantly. And while it was soft, it was in no way soggy and dh agreed we could probably scatter some in salads this winter.
I absolutely love the quality of veggies fresh from the farm or from my garden, and I'm trying to freeze a lot of things for this winter. Sure, it won't be the same as eating it fresh, but it's all organic and will at the very least be frozen when it's fresh picked.

Froze corn from four dozen ears. This should be about 1/3 of the crop, plus enough layed back for fresh on the cob eating.

Zucchini. I grated up a monster one and froze it in 3 cup portions to use in chili this fall/winter. The basil once again looks like I never harvested it, so I'll be making and freezing a bunch more pesto cubes today, too. krisinmi , I never heard of dragon's tongue beans but I sure love the name!

Assorted leftovers from the grandchildrens' visit. They'll be coming up again in the not-too-distant future, but not soon enough for this stuff to survive without freezing it.

Two quart bags of green beans joined the two bags of spinach I mentioned above.
I blanched and flash froze a bunch of basil leaves, and am experimenting with storage by using the foodsaver to seal the leaves in a pint jar. The jar will be stored in the freezer. I've never liked the results of freezing basil in ice cube trays and we have more pesto frozen than I would want to eat over the course of the winter (dh prefers his pesto to be LIMITED) so I don't want to make any more of that. Time to try something new.
I ripped up most of the cilantro (although there's a big bunch still growing in the raised bed) and will deal with freezing some of that today.

I finally divided up the three pound chub of pork sausage I got from my trip to Costco several weeks ago into seven portions. Froze up six packages and made biscuits and gravy for breakfast with the last package,

Got the cilantro frozen. I've never frozen it before but we have so much cilantro this year. If we don't like the frozen stuff in salsa, we can always use it in cilantro lime rice this winter. I have a feeling texture won't matter in that stuff!
My freezer is getting pretty stuffed, and I'll be wanting to freeze more. I hope the new freezer gets here soon...

Since we can't keep up with all the cherry tomatoes, I filled a quart bag with them and popped that into the freezer as well.

1 qt okra; about a pint of sliced jalapenos. Have a few (maybe 2 cups) bell pepper chopped ready to freze.
Garden is winding down.

susannah , how will you use frozen cherry tomatoes? I filled another quart bag, so now I have two quarts of home grown cherry tomatoes in the freezer, along with one bag of store-bought cherry and grape tomato leftovers. In the past I've used frozen cherry tomatoes by just tossing them - while still frozen - into a pot of chili while it was cooking. This year I'm thinking that since the little skins usually slip off very easily when the cherry tomatoes thaw, why not try making sort-of-from-fresh tomato pasta sauce by cooking them down with some seasonings. Maybe I'll leave the skins on, I'll see how it goes. I'm not sure how that's going to turn out but I'm going to give it a try with some of them. I do have two quart bags marked for chili, and the other quart bag marked "experimental". If the experiment tomato sauce turns out good, I might use another bag that way instead of in chili. This is the first year I'll have had more than one quart bag of cherry tomatoes in the freezer when winter comes - these plants were incredibly productive - so it's time to try new things. Edited to say that tomato soup could also be a possibility with the frozen surplus cherry tomatoes. Decisions, decisions...

Froze another quart bag of spinach yesterday.
I have a cabbage that I want to blanch and freeze, but it's supposed to be warm and humid for awhile. Last week's promise of "low 70 degree temperatures by the weekend" has not materialized. Now it's next weekend that's supposed to be cooler. Just might end up blanching it on the camp stove if this continues. Oh well. Cold weather will come soon enough - probably too soon.
