The jarlsberg made last month finished it's sit in the cave all covered in wax.
Time to take it out and let it age at room temperature for 4-6 weeks. It's weird to let cheese sit at room temperature for a day or a few days to dry off, but for 4-6 weeks-that's really weird. Think about it, you take a piece of cheese out and let it sit on the counter for weeks!
During this time, it will start to make those interior holes, the gases that are produced by the propionic shermanii make those holes you get in swiss type cheeses. This morning it broke the wax--an expected result of expansion. So the culture is already doing it's work.
I'll keep an eye on it. Since the wax is broken the cheese can get molds to start to grow on the outside. If it starts soon, I'll peel off the wax, and wash it in a brine solution. To keep it moist I'll rub some oil on it. Wash and moisturize, lol. That's the program for 4-6 weeks. Then it's ready.

Considering our changed needs, I'm not making cheese anymore. Life is absurd, change is like jumping over hurdles, landing on the other side and looking back and saying, 'gosh you did this'.
I'm going to sell off the press, the 2 molds and tops for the molds, and I have 5 types of meso thermo red propionic and flora danika, some original well frozen/sealed in sanitized jars or original envelopes.
If anyone is thinking of making cheese, it would be a good starter set. The molds are for 4 lb batches, from 4 gallons to give you a scale. I'm not looking for a price on our labor to make the molds or press, just something close to the cost of materials. I thought I'd ask here first since you all watched my progress over 2 years, and gosh it was the most funnest thing ever for me. (yeah I know funner and funnest, are not words but you get my drift)
If you want to make an offer and pay for shipping, just PM me. I also belong to a cheese forum, so that's also an option for where I could sell it off.

feather, you love cheese, right? kudos to you for making so much cheese in the past & you didn't even eat it! That's will power girlfriend. I'd rather have cheese, than desert. You are doing great with your weight loss too. Slow and steady ...wins the race. How's the foot? Still sore & itchy? Itchy throws off all of my suspicions about what's wrong with your foot???

I get cha. Yes I love cheese and I just can't eat any of the 150 to 200 lbs of cheese that is in my cheese cave refrigerator. (I have not measured it) I think it might be more than will power, it might be a super power. I told DH, as we walked past it last week--don't look, just don't look, shhhhhh, quiet. My eyes well up with tears considering how easy it would be to melt some over toast, or eat grilled cheese. I won't. I have to consider my blood pressure, so I am considering that.
The foot is not good but improves with tight wrapping the ankle area.
Sometimes God just asks us to be patient, He certainly is.

My son that I made a 4 lb wheel of Jarlsberg for, this spring, finally cut into it and sent this picture of it. He liked it. Notice the yellow rind, it aged at room temperature for 8 weeks to get that to turn out so nice.

We always used that phrase in regards to people we knew that were funny and amused us on many different occasions and in many different ways. One of the things that comes to mind lately is your hilarious posts as far as the different Monarchs... I sincerely apologize if I inadvertently hurt your feelings. Forgive me.... but that is the definition of "a piece of work" that we grew up with... That's interesting. That isn't the definition of a piece of work that I've ever seen before. I've seen people use that phrase using an entirely different and negative definition, in real life, and on this forum. Glad to know what you meant by it. You're the first and only person that gives it this definition, in my experience.
Given, that there are two completely opposing definitions, it can only confuse people. Forgiven.
