I'm just starting out with the Home Cheese Making by Ricki Carrol book as my guide. Can anyone tell me why some of her recipes call for pasteurized milk and some don't? My first thought was that the recipes which don't bring the milk through pasteurization temps but I'm not sure.

I'm just new to cheese making and I'm only using pasteurized milk from the store because that is what I have available. I use calcium chloride (1 tsp water solution/4 gallons of milk) which is supposed to help with setting the curd. I'm also only using cows milk right now. I just avoid any milk labeled ultra pasteurized as it has been heated at too high a temperature for too long to make good curd. @tojo66, good luck and I hope you make some good cheeses!

There are a few cheeses, like cottage cheese, that benefit from the high temps, I think around 185F, to change the protein structure. Most don't need it. I think she says that because of liability. I have never made cheese with pasturized milk in my life. I haven't even done cottage cheese that way, I just have softer curds than if I had heated the milk. Glad to know I don't need to worry about it, thanks for that!

It is so hard to find milk that is not ultra-pasteurized anymore! I would love to also find Organic milk that is not ultra-pasteurized, but at this point I would be willing to settle for almost anything, lol.
