Okay, okay, so it wasn't today but a few days ago I made grape jelly from our own grapes that were hanging out in the freezer. Yum! It tastes a little like chokecherry jelly without as much tang so I labeled my jar tops as "tangy grape jelly' for gifting. Anyone else making room in their freezers for this season's produce? I have more to do yet. It is almost planting time here so I am running out of time......

We just don't can much in the winter. May do more with this new gleaning group. We are getting a lot of stuff from an organic farm, fruit right now. We usually just can ingredients for meals. Tomatoes, corn, green beans and fruit at harvest. We make freezer jam from wild black berries, strawberries and peaches. We only have a tiny 24v chest freezer. Otherwise we extend the seasons and store, we eat as much fresh as we can. crock some and smoke a lot of meat. We do can some meat, mostly chicken, rabbit and a lot of fish, tuna and smoked salmon. We don't eat a lot of red meat....James

Last week I pulled my last two layers out of the freezer and boiled them down. Along with them added some more chicken I had in the freezer (as well as carrots and onions-fresh) and ended up canning 27 pints of chicken soup. That's a lot of lunches for hubby! I baked a ham a couple of days ago for us; planning on picking all of the remaining meat off of it tonite-then boil the rest down tomorrow and can ham and bean soup. I love to can! Mari

James I love your many-pronged approach to food storage and eating. If we didn't have all our freezer I would do it the way you do. Mari that soup sounds wonderful. Twenty-seven pints is a lot and will make those lunches so much easier for your husband to make. You reminded me that I need to can up chicken soup as well but it might have to wait until next winter now. All I have on my shelves at the moment for soups is vegetable. Oh, and some stew too. I didn't can anything but did cook up, puree and freeze some of our pumpkins from last year's harvest that were languishing in the basement. It was time. I have a few more to do. The kids and spouse loved munching on the roasted seeds. Dh wants pumpkin bars now of course.

Nothing....YEAH! Hubby called me last night saying, "Come home now, freezers off!" Got home and he found the problem....his fault, cord got unplugged. We ended up with only 7 small packages of ground meats that were too thaw. Last night I was really thinking I was going to be canning an entire freezer of meat today!

It is a great place and sorry for the thread drift. Today, we canned more lard and more lard and more lard. This pig was so fat!! I want the lard for soap so I just keep canning it. I also found a bag of tomatoes from last fall in the freezer that I forgot about. I've got to can those. I need more spaghetti sauce anyway. We are out and it will be a long time before we start getting tomatoes.

I am working on my freezers. I thawed four gallons of raspberries and made juice. Canned 8 pints and froze 3 pints. I used up all of my regular tattler lids. Looks like I need to order more. I have lamb stew meat thawing. Tomorrow I plan to get started on browning and canning stew meat. Susan

during a meeting today at work- I managed to do a To DO list and included making jam from the berries I have in the freezer I picked last summer- I need to get those out of the freezer and canned up and to make some fruit leather too-

I canned 14 pints of cabbage soup the day before yesterday.I plan on making a variety of soups to can for quick meals. Sometimes I just want soup and my husband isn't a big fan of it because he wants big meals. This means I can prepare soups with ingredients he won't eat, like onions, cabbage, mushrooms, etc.(fussy man, but a big eater).

Same here - clearing out some in the freezers. I canned beef chunks and beef broth yesterday. Turkey and broth today. I have tomatoes thawing and I'm thinking I would like to make pizza sauce. My favorite pizza sauce is the Mrs. Wages mix. It's a bit of a splurge, but it's so good. I just can't duplicate it making it from scratch. If we get to the farm store soon, I'll be canning pizza sauce.

I made chalupas in the crock pot and it make a tremendous amount (pork loin, pinto beans, and seasoning). So yesterday, I canned up two quarts of the leftovers and made 5 pints of pizza sauce (thanks Melissa for the recipe!!)from my frozen tomatoes.

I finally finished my canning yesterday. Pizza sauce, lamb and chicken broths and a few jars of turkey. The freezer space in now filled with the beef we had processed.

DW canned 11 Q of chick peas (we love hummus, and chick peas were on sale), 10 Q of potatoes and 5 Q of BBQ pork. MMMMMMMMMMMM!!!!

Turkey stock. I stripped the carcass after the meal and made a really nice rich broth. Strained and sealed, and ready for deliciousness!
I have some grape juice I intend to turn into jelly. I'm just lazy lately.

I like mrs wages but I've never tried the pizza sauce...I will be looking for it. Yesterday I cooked cranberries in water, let them sit 24hrs, strain, add a little sugar = juice. Then I cooked the berries with a jar of grape jelly and it will go on our yogurt. I buy lots of cranberries in the fall at Sprouts, I think they are around a buck or less. Tomorrow is Earth Day and I have a big list of earthy kitchen things to do!
