Spicy Hot Pickled Eggs

Ingredients
4 dozen hard-boiled eggs
4 cups vinegar
1 onion, sliced
8 habanero peppers
7 jalapenos
1/2 cup pickled jalapeno pepper
2 tablespoons red pepper flakes
5 dashes hot sauce
2 tablespoons salt
3 tablespoons mustard seeds
3 pinches alum
4 tablespoons peppercorns
5 cloves garlic
2 cups sliced carrots or 2 cups cauliflower (or both)
boil everything except the eggs for about 15 minutes. put the eggs in a huge jar. pour the hot brine on top of the eggs. top off with hot water to completely cover the eggs. let sit in the refrigerator for 2 weeks.

HAWK'S BAR ROOM PICKLED EGGS AND SAUSAGE
2 cups white vinegar
1 cup water
3 tablespoons pickling spice
1 teaspoon salt
1 tablespoon crushed red pepper
6 to 7 squirts Frank's Red Hot Sauce (optional for color or you can use beet juice)
1 tablespoon crushed garlic or powder
1 tablespoon dried onion
Hard boil 18 eggs and boil , then 3 packages Polish sausage until they float. Arrange eggs and sausage in layers, pack to top. take shells of ,Take care not to split eggs. Combine all other ingredients in a medium sauce pan and simmer for 5 minutes.
While still hot, carefully pour brine until full. Put lid on tight shake to mix for 3 days and enjoy!---Hawk---

Some times we pickle eggs just by keeping them in left over sweet pickle or sweet mix (pickle, cauliflower, onion) juice. Depending on which juice and how much is available it may be topped off with water, vinegar, or both as needed. Not really a pickling process, but more a flavor thing.

I like to cold smoke boiled eggs the same time I smoke cheese. Then pickle them in pickling juice. No pickling juice goes to waste here, even the juice from dilly beans, pickled beets and olives....James
