feather , Well, that was interesting. A blt sandwich without a crispy shot of salt, just kind of misses the mark. I haven't tried the carrot bacon, still, it is interesting.

A while back, midtnmama posted a link to a recipe for carrot hot dogs. Strangely enough, I was just looking at the recipe yesterday (maybe because I have lots of fresh carrots). The only ingredient I don't have in the house is liquid smoke but if I remember to buy that, I'll give the recipe a try in the next week or two.

I dunno. Carrot bacon convincing?? I will try it, but I think only a vegan who hadn't tasted real bacon in years would think it tastes like bacon.
But you know what really does taste like bacon? Ikan bilis, which are mini dried anchovies or other tiny fish. This is a common ingredient in Malaysian and Indonesian cuisine. Often you fry the little darlings till crispy and use them to garnish dishes...first time I had them, I said to the cook, "OMG, this tastes just like bacon!!" Then I realized what a faux pas it was because the cook was Muslim 🙄 but he said well now he knew why people like bacon so much...

I love them! While I like hot dogs, I do not like the carcinogens and fat.Soooo
I especially love them when topped with chili (vegetarian of course), and onions. The secret is to not cook them all the way before sauteeing, but let them cook the rest of the way when sauteeing in the sauce. I remove the thinner carrots sooner when cooking.

I like to wrap them in dough and make pigs in a blanket (need a new name!). Then dip in a mixture of ketchup and mustard!

Corrected this. I don't use seitan, which is wheat gluten. Tempeh is fermented soybeans.

sss3, Cabin Fever, feather, susannah, hermitjohn, snoozy, midtnmama, Sorry everyone, I will be correcting my post about making "bacon." I make them with Tempeh not seitan. I don't care to use seitan which is wheat gluten. Tempeh is fermented soybeans. I like the texture. To answer your question, sss3, I haven't baked it because I like to roll them over to get all over consistency of the mixture and poke them to make sure they aren't too soft. But I'll bet you can bake them.

Anyone know if these 'carrot hot dogs' can be pan fried or baked? I didnt go hunting up recipe but assume like most fake meat, its precooked then frozen, and you just heat it up. My ex would bring home the tofu hotdogs and such. I really didnt see the point, either eat meat or dont eat meat, why fake meat? Actually I really liked the frozen tempeh, though that isnt fake meat, its fermented soy or beans or grain or mix of those. Expensive for what it is at health food store. I tried making my own, got some tempeh culture, but its lot work unless you make it in hottest part of summer and freeze it. Needs high but not too high temperature for culture to grow fast.

Cabin Fever, I made the pigs in a blanket with carrots for the big family gathering at Christmas and the kids and adults loved them! I now expected to make them for church barbecues. I'm asked, "Are you bringing carrot dogs?"

Cabin Fever and Wind in her Hair, Definately add no SOS to the title. That is what I struggle with. This has definately been a journey. Things we did early on, we don't do now that our tastebuds have changed and we are finding easier ways to do things. Most days, we simply have potatoes, corn on the cob, salad with HM compliant dressing and a stir fry of whatever is in the garden.

midtnmama, feather, My grandkids and I enjoyed the carrot dogs very much! Topped with vegan chili and vegan cashew-cheese - delicious! I also made carrot bacon in a very similar way. I marinaded the thin strips of carrot and then baked them. I have issues with too much sodium so this would be a very occasional treat for me. midtnmama, This morning I made us a bowl of brown rice, quinoa, banana, pineapple, mango, chia seeds, coconut, almond milk topped with granola. It was yummy. Then for lunch I massaged some chopped kale, topped it with black beans, diced red onion, chopped red bell pepper, cubed cooked sweet potato, crushed no-salt corn tortilla chips, and green chili sour cream drizzled on top for a dressing. I've been enjoying haldi doodh instead of coffee each morning and hibiscus tea during the day. Oh, I also had warm pita chips and Israeli hummus at lunch. We eat pretty good around here!

Imagine how any clogging of your arteries is getting better. I'll give you my menu for today: Breakfast: Black bean soup over sweet potatoes Lunch: big salad with hm dressing (Orange juice and homemade no oil )hummus; Leftover chili over sweet potatoes and mac and cheeze (no cheese, but plenty creamy). Dinner: Barbecued portabello mushrooms, mashed potatoes, stir fried okra and mac and Cheeze (no cheese); plus a salad with 3-2-1 homemade salad dressing (3 tblsp unsweetened applesauce, 2 tsp balsamic vinegar, 1 tsp mustard).

Truth is, the weight loss has just been a bonus of allowing our bodies to heal themselves, once we stopped eating the Standard American Diet and began following an evidence-based, whole food, plant-based way of life. I feel like the weight loss is our bodies way of "resetting" back to a healthy "normal". And being able to eliminate and/or substantially reduce our rx medications is proof positive that our bodies ARE healing. We both feel 20 years younger!
