Often I cut the recipe in half. If I'm making two flavors, I cut the recipe in half and make twice to get the two flavors separately. For the party tonight, I made half a batch Candy Cane flavored and half a batch hot chocolate flavored and I piped them to make bitesized cookies.
Full recipe: Whip together 4 egg whites, pinch of salt, 1/4 teaspoon of cream of tartar until soft peaks. Continue whipping and gradually add 1 1/3 cup of granulated sugar. Whip until firm peaks can form. Drop by spoonfuls (or pipe) onto parchment lined cookie sheets.
Flavors I've used: Candy Cane: while adding sugar, add one drop of red color and 1/2 tsp of peppermint flavor. Hot Chocolate: while adding sugar, add 1/3 cup cocoa powder Lemon: after whipping, stir in 1/2 tsp grated lemon zest Vanilla: While adding sugar, add 1 teaspoon vanilla flavoring
Bake 40 minutes at 275 F. The cookies should come easily off the parchment when they're done.

We used to have these at Christmas time when I was growing up. I'm going to have to make them and see if DH likes them. I bet he would like them.
