I just had to try this.....
Food processor Grind up 1/2 cup of almonds with 1/2 cup of dates (this takes at least 10 minutes) Add 1 t vanilla 1/2 cup almond milk 1 cup rinsed and drained chick peas
Get it all smooth and creamy and freeze. I tasted it before I froze it. It is delicious. It's a surprise for DH.
I'd garnish it with chocolate nibs which I have in the pantry.

We'll have to try this! We usually make "nice cream" as a treat/dessert. But, this recipe sounds just as good. Thanks!

Cabin Fever, DH really liked it, and even liked the natural crunchy coco nibs on it. It's very rich, so the serving is small.

We often use some dark chocolate chips and chopped pecans in our nice cream. Delicious! I would be tempted to substitute 1t of bourbon for the 1t of vanilla.....but that's just me.
