sss3, I've never tried to make bread gluten free, but times are a changing and there's a lot more out there, different gluten free flours, flour blends. If you really want to make bread, you could find a gluten free option that will work for you. snoozy, so I'm not the only one that does that! I remembered to put flax meal in my bread today. I wonder where I left my red foil stars, I need to stick one on my forehead.

Here's a gluten free flax seed/meal bread. nutritionrefined.com/flaxseed-bread/Flax seed meal, 2-5 T per day is good for you, however, if you aren't used to it, it can cause bloating and gas, so it might be better to have just a little at first and work your way up. Also, I don't have a vitamix, to grind the seeds, so I just buy the flax seed meal, which is already ground, from the grocery store.
