Canned some pork (bone-in butt roasts were on sale). Made bone broth with the bones. Used the bone broth to can pinto beans. Can't wait to try them!!
Last nights dinner was pork carnitas with the pork and cowboy caviar - most of which was made with OUR food and food I had canned. It was aWeSoMe!!!
Cowboy caviar is not the same as cowboy candy. It is black beans, tomatoes, garbanzos, onion, peppers....you can eat it with tortilla chips, or in our case on your carnita!

For us cowboy caviar is done on a bowl that has a large upper rim.
You place the same mix of beans, etc., you talked about on top of the rim with tons of cilantro and in the center of the plate/bowl, you spread cream cheese that's been made more liquidy with a little milk and which has some kind of taco type seasonings but we use homemade. Or you can use chili type seasonings. Lettuce is chopped up and spread over that. We use corn chips or whatever we like such as tortillas to scoop from the outside in all the way across. Very messy and very delicious.

I forgot to mention it also has corn. There are spices, including fresh cilantro. Leftovers for lunch. Yummy!
