Would it be possible to remove 1/8" of the countertop from either side of the stove opening with a belt sander? If you attempt this, make sure your hold the the belt sander such that the sanding surface is pushing downward on the Formica surface. If you hold the sander the other way, it may cause the Formica to de-laminate from the fiberboard base.

Pretty much all formica countertops are held in place with screws up from the bottom. Often there is a triangle plastic part that is screwed to the cabinet with two screws and then one screw goes up through the plastic into the bottom of the countertop. Usually 4 screws...one in each corner of the countertop. Loosen the 4 screws and the only thing that is holding the countertop in place is the caulking.
Sand / saw off what you need from the side away from the stove, put it back and recaulk the sawn / sanded edge. Keep the good edge by the stove intact.
