I've been making this carrot cake w/cream cheese icing for 30 years now. I'm making it for myself and Rustaholic, for tomorrow. I'm going to eat one piece for me and one for him. Carrot cake In a bowl: 6 carrots shredded (about 3 cups) 1 and 1/2 cups sugar 3 eggs 1 cup of vegetable oil 1 and 1/2 t. cinnamon 1 t. vanilla 1 t. baking soda 1/2 t. salt 1/4 t. nutmeg 1 cup of chopped walnuts Mix until well blended, then add: 2 cups of flour Mix for 2 minutes by hand. Bake at 350 degrees F in a greased floured 9x13 inch pan, for 35-45 minutes, until it begins to pull away from the sides and a wood toothpick comes out without any wet batter. Then take it out and let it cool. Cream Cheese Icing. Let 8 oz of cream cheese come to room temperature while the cake is baking and cooling. Add 1 T. of milk and 1 t. vanilla. Mix with a hand mixer adding 4 cups of powdered (icing) sugar. Spread on the cooled cake. Optional to put on top: chopped roasted chopped walnuts. (This recipe is an old Betty Crocker recipe from the adapted apple cake recipe of the 1986 edition) I can never make a cake this big and have it eaten without it going stale, so when you cut squares of it, slice each square horizontally through the middle of the cake layer, then put the bottom piece on the top of the icing piece, wrap in plastic and freeze by the piece. The icing is then, in the middle of the cake sandwich.

Ma'am, if that cake is half as as good as my MIL's, your husband is a lucky man, indeed. My MIL often tells me I'm her favorite in-law, and just because I am, I get her carrot cake for my birthday as a special present. I've gotten one every year since 1977. Another true story...I didn't date a lot during high school. Maybe because I had pretty high standards, most likely because the girls did. Regardless, my wife was the pick of her class, probably of the whole high school. I told her the first time I ever met her, I was going to marry her. No sense in settling for second best. Only took me five years, but I got it done. I would say it was charm, wit and dashing good looks, but since I can be dumber than a rock and worse looking than nine miles of bad road, I suspect she just finally took pity on me. After 38 years of blissful marriage, I suspect she's quit trying to escape by now...

I ate my piece tonight, the edges were nicely crispy, the walnuts had quite a bit of crunch, the cake was cakey and rich almost like a torte, and the icing was smooth and cream cheesy. *please God don't let me sleep walk tonight, I have no idea what might happen to that cake if I sleep walk*

feather, this cake sounds yummy, thanks for posting the recipe! Oh, and my 10 year old volunteered himself and his brothers to help with leftovers, that way you don't have to go to all the trouble of freezing them

It really is my best cake and icing. Try it if you get a chance. Your 10 year old and his brothers are welcome to eat up all my cake.

feather, I will be trying your recipe for sure, both my 10 year old and 8 year old want me to bake your carrot cake for their birthdays next month! The kids all love to read the recipe threads on here with me. I agree about them eating a person out of house and home, even my 7 year old eats more than me! They aren't a bit overweight though, I don't think they sit still long enough for anything to stick :-)
