1 1/2 cup softened butter
3 3/4 cup white spelt flour 3 cup brown sugar packed 1 1/2 tsp. baking soda 3 eggs 3/4 tsp. salt 4 1/2 cup quick oats 1/2 tsp. vanilla extract

1 12 oz pkg chocolate chips 1 can sweetened condensed milk 2 Tablespoons butter 1 cup chopped walnuts 1 tsp. vanilla 1/2 tsp. salt
Spray two 13 X 9 cake pans with non-stick spray.
In a large bowl mix brown sugar, 1 1/2 cup butter, eggs and 1/2 tsp. vanilla. Stir in flour, baking soda, 3/4 tsp. salt then the oats. Spread 1/4 of the mixture in each of the two pans and pack tightly. Save the other half for the top layer.
Heat Chocolate chips, condensed milk and 2 Tablespoons butter in a 2 quart saucepan over low heat, stirring constantly. Remove from heat: stir in nuts, I tsp. vanilla and 1/2 tsp. salt. Spread half over each pan in a smooth layer. Place both pans in a freezer for a half hour.
Preheat oven to 350 F. Remove pans from freezer and divide the remaining oatmeal mix in each pan and pack tightly. Bake until golden brown, around 23 minutes in our stove. Cut into bars while it is still warm.
As you can see this is NOT diet food. I was working hard when I was eating these bars daily. [/font][/font]
