Tallpines, we are in WI too and we grew up in a house with no enchiladas at all. Mom and dad were really like Archie Bunker, anti mexican, black, jewish, polish, homosexual, trans, other church, meatheads lol.....it was a hot cauldron of hate. It was a great source of embarrassment, so we didn't take people to our home. So none of those foods, what a shame. We, as children, didn't see that same thing in the schools, so as we grew we realized what a mess that family was, thank goodness for the next generation! I've never made a good enchilada and I didn't try one of those corn meat cheese things wrapped in corn leaves...um tamales until I was in my 40's. Now I love love love mexican spices and chilies. DH not so much.

I spent years perfecting enchiladas, but never freeze them, I eat them while hot just out of the oven. are you trying to make them first and eat them frozen ? or do something like some pre frozen then microwave to cook kind of thing ?
if you get it right, it will not matter to much what you put in them, Beans, meat, potatoes, rice, cheese, whatever...

Fixed some tonight. Black beans, salsa, onions, cheese. Put in oven. Cheese on top. Always feel like something is missing. Don't eat much meat anymore. Have gout. No beef. Got tired of chicken.

Um, beans with rice, or beans with corn or both, make a complete protein, so it might be that? You could add avocado, and green peppers too. You can put a salsa or tomato/pepper sauce, on top, before you add the cheese to the top.
