Youngest son's Bday was yesterday, DH's Bday today. So for DH I made him 'hot pockets'. They can't be spicy since he doesn't like spice but the basic recipe using any kind of meat would work, any combinations of spices you like would work.
Yesterday I made the filling and the dough and refrigerated them overnight.
Shopping list, chicken breasts, black beans, onion, green pepper, bbq sauce, soft melty cheese, flour, salt, butter, milk, eggs, sauce/sour cream/hot sauce.
Dough In a food processor. 4 cups of flour 1/2 t. salt 2 sticks of butter Combine until crumbly. add 2 eggs milk, until it comes together in a dough wrap in plastic and refrigerate overnight.
Filling Poach 3 chicken breasts w/bone/skin in water for 40 minutes, cool Chop the chicken in 1/4'' cubes In the same pan from the chicken, save a little broth in the pan. Cook 1 cup of onion and 1 cup of green peppers chopped small until soft. Cook off most of the moisture. Add 2 cups of bbq sauce Add 2 cups of black beans All the chopped chicken Stir and cool, refrigerate overnight.
Preheat oven to 350 degrees F Beat 2 whole eggs in a bowl. Pinch off golf ball sized pieces of dough, roll flat round until 1/8th inch thick. Fill with chicken filling and some sliced mild melty cheese (provolone here). Put a little water on the edges of the dough. Fold over and make into a half moon shape. Seal the edges with a fork or by hand, your choice. Brush with beaten eggs, place on parchment or silpat or greased baking tray.
Bake for 35 minutes. Serve with BBQ sauce, or veggie dip, or sour cream and hot sauce, your choice.
They liked them. They are a treat here.

feather , how many does this make approximately? thanks I made three half sheet pans of them, so around 21 if you make them the same size. I ended up making different sizes but essentially the same amount of filling and dough.
