Made a one loaf lemon pound cake for DH's birthday.
Pound Cake (lemon) Heat oven to 325 degrees F. Grease and flour a full sized loaf pan.
Beat with a mixer: 2/3 cup butter (10 and 2/3rd T) 1 and 1/2 cup sugar Then add 2 eggs until it is fluffy
In another bowl mix: 3/4 t. baking powder 3/4 t. salt 2 Cups of flour
In a large cup measure mix: 2/3 cup milk 1 T vanilla extract (or lemon extract, or grated lemon rind and lemon juice, or 2 pkts of Pure Lemon- I used the rind/juice/and pure lemon)
Alternately add 1/2 of the flour mixture to the sugar mixture, then 1/2 of the milk mixture to the sugar mixture, repeat. This batter is very thick, spoon it into the loaf pan.
Bake for 75 minutes, cool slightly then turn onto a serving plate. (frost or not, cover with strawberries--lemon cream cheese frosting recipe to follow in another post)
