Egg Custard
3eggs
2 cups scalded milk
1/2 cup of brown sugar
1 teaspoon vanilla
Nutmeg sprinkled on top.....preheat oven at 425 degrees.....mix ingredients and put into pyrex rectangular dish.....turn the heat down to 350 when you put it in the oven...bake for about
20 minutes.....knife inserted will come out clean when done.....SO YUMMY

When I had chickens, egg custard was very high on the list. I can easily be tempted to creme brule' in restaurants, too. I always bake mine in a water bath, with the oven quite low. If you don't have individual custard cups and the little metal rack for same, you can put your casserole inside a bigger one, and fill that with water at least half way up. Makes very, very creamy custard.
