I bought some almond milk recently on a lark, never tried it before.
Tastes like slightly cardboardy regular milk as far as I can tell.
Wondering what to do with it. Add it to coffee or hot cocoa?
Whenever I have recipes that call for special stuff like this they rarely get done, and then I forget about them, so I don't recall any that would use it.

Almond milk adds a nice nutty sweetness to rice puddings and custards. I have not used almond milk in anything else.

I haven't made rice pudding in awhile, sounds like a good idea. My aunt's old recipe is a nice one.

You can use it in baking, muffins, pancakes, etc. Vegan recipes use it a lot.

One thing I liked about almond milk and coconut milk, is that it lasts longer than milk when kept in the refrigerator. Coconut milk is shelf stable before opening it, so that is nice to have in the pantry. I use either of these when making curries when I have them on hand. We met up with a couple, friends of DH, for a tour/hike one day. The woman, very healthy lady, eats overnight oats everyday. What a good habit to get into. To make it, you soak oats in milk (coconut or almond) along with fruits, nuts, and spices to your liking, overnight in small canning jar. Until almond trees have udders and teats, that ain't milk! With my body showing more and more lactose intolerance, the hospital thought that almond milk night be better for me. I suppose that if I never knew what milk is supposed to taste like, I may have liked it. That once was enough.

Martin I thought it'd be a bit of a treat or a nice change of pace rather than a soy burger type of thing. Hmm.. I hadn't thought about lactose intolerance with aging.. I don't know what I'd do without milk. Lived on it all my life. You past the don't sneeze NO MATTER WHAT point of healing yet Martin?

shin,no sneezing and no heavy coughing. Sneezes hurt right out the top of my skull. Going to be awhile. Not certain what brought on the lactose intolerance but may have had it all my life. Too much ice cream was often followed by severe abdomnal cramps. Never really gave it much thought other than blame myself for excess. Same thing returned when I was on protein-rich supplements in the hospital and rehab. Cramps were much worse until it was determined what was going on. A Lactaid pill in the morning meds allow me to enjoy Wheaties to try to rebuild what was lost. Martin

paquebot, I imagine you eat a good supply of probiotics, like live sauerkraut, kefir, sour cream, buttermilk, fermented salsa or kimchi, when you eat at home. These help break down the lactose. If you were in the hospital a long time, on antibiotics, eating crappy hospital food your gut biome had to change and not for the better. When my stomach is miserable, and I can't get it under control, I drink a quart of kefir over the period of a day, 8 oz at a time, for a week or so at a time, and it cleared up any problems I was having. Note: almond milk. If you have well strained almond milk it shouldn't cause problems. If you or anyone has diverticulitis, then not well strained almond milk can create problems. My ex mother in law would eat chili and because she was afraid that she'd get sick from the spices, she'd follow it up with ice cream. She found out she was lactose intolerant and it was the ice cream causing her digestive upset. The problem wasn't the chili or it's spices at all.
