I made a big greek salad because it is getting pretty warm outside and we find it refreshing.
1 large cucumber peeled 4 tomatoes 1 cup feta cheese 1/2 cup mixed marinated olives
1 tsp. basil S&P Olive oil cider vinegar
(optional-onions, bell pepper, oregano) Chop the cucumber and tomatoes in fairly large bite sized chunks. Chop the feta cheese smaller. Mix everything together and serve.

I made this yesterday....it was wonderful...I also cut tiny lemon slices in half and put them around the top of the dish...I made a sweet lemon and sugar dressing to drizzle over it Spring Lemon Bow Tie Salad Serves 2 Prep Time 10 min Cook Time 12 min You will love how light and tasty this Springy Lemon Bow Tie Salad is with tender peas, fresh basil, bow tie shaped pasta, tangy parmesan cheese and spritzed with freshly squeezed lemon juice and tossed in olive oil. It makes a great dish to any meal and can be whipped up in no time! Ingredients 8 ounces bow tie pasta 1/2 cup frozen peas, thawed 1/4 cup parmesan cheese, shredded 6 large basil leaves, shredded 2 tablespoons olive oil 1/2 large lemon salt and pepper to taste Directions Cook pasta according to directions to al dente, drain, rinse and toss with olive oil in a bowl Add peas and basil then squeeze lemon juice; toss gently Divide on two plates and top each 1/8 cup parmesan cheese Season with salt and pepper as desired Recipe Notes I mentioned in the post using fresh peas so if you go that route, you will need to cook them first. For frozen peas just defrost and don't cook - I ran mine under cold water until they were thawed. www.cookingonthefrontburners.com/2018/05/04/springy-lemon-bow-tie-salad/
