Default Sweet and Sour Chicken
4 1/2 # chicken (I used cooked chicken; the original recipe calls for raw)
2 green peppers
1 red bell pepper
2 onions, chopped
60 oz pineapple chunks, drained (save juice)
1 cup brown sugar
1 1/4 cup white vinegar
6 tblsp soy sauce
4 tblsp catsup
1 tsp ginger
3 cups reserved pineapple juice
Layer the chicken, peppers, onion, and pineapple chunks in 5 quart jars. Combine remaining ingredients and bring to boil to dissolve sugar. Pour into jars to fill. Place lids and seal. Pressure can at 15# for 90 minutes. (Tweaked recipe originally from creative canning blog). I cut the veggies in large pieces - I think they did better this way.
