Cook enough chicken to fill 3 quart jars. Place chicken in jars.
Make sauce:
1 1/2 tblsp ground ginger
1 1/2 tsp garlic
3/4 tsp crushed red pepper (I used homegrown dried hot peppers)
3/4 tsp sesame oil
1/4 tsp pepper
2 1/2 tblsp soy sauce
5 tblsp water
1/2 cup sugar
1/2 cup white vinegar
1 1/2 cups orange juice
Zest of one orange
Mix together and bring to a boil to dissove sugar. Pour over chicken in jars, place lids and seal. Pressure can for 90 minutes at 15# pressure. (Tweaked from an original recipe on the creative canning blog)
