A few years ago I found the best tomato soup recipe. I made it so many times, that I could do it from memory. My memory has now failed me and I can't find that recipe. It's the only tomato soup recipe that doesn't come from a campbells soup can that my husband will eat. And he loved it. I've searched the internet ad nauseam and still can't find it. I'm hoping someone on here might know of it.
This is what I remember-
No cream or milk. My husband doesn't like either of those in his soups (even though I milk cows). Baking soda was added towards the end. It turned it to a creamy, light colored soup and my husband was sure I was sneaking cream in to it. It took a large handful of fresh basil. There was onion, butter and maybe flour. Maybe chicken stock I used my canned tomatoes and my canned tomato juice. It was super fast to make. No long simmering time. I could call him in from the field when I put the pot on the stove and it was done by the time he washed his hands. It was the best tasting tomato basil soup I've ever had, even without the milk/cream.
See why I'm banging my head trying to find the original recipe? I searched on here and almost thought I had it from a thread back in 2015, but nope.
I've messed around trying to duplicate it, but it always tastes off just a bit.
Anyone have one like this?
