I love apples! But our trees are too young yet so I bought over 20lbs of ginger golds at $0.90/lb as I think I mentioned elsewhere. Well SO MUCH APPLE FUN!
Yesterday i used the turnhandle machine thingy to slice/core/peel the apples. The apples turn out circular. While that is incredibly fast, I still prefer chunkier normal looking slices and I couldn't care less if the apples are peeled. So today I pulled out my trusty KitchenAid food processor and dang! That machine has a slicing ring that makes the perfect size slices for pie.
So this weekend, I did 3 normal pie fillings (frozen in the pie pan to get the shape and now standing up like books in my freezer) and 2 apple crisps to eat now with a graham cracker/high fiber oatmeal crust and only 2 T of butter. The crisps were/are great but a little dry with no topping (only bottom crust) which I solved with WHIPPED CREAM!
Today, I am mixing our already frozen blueberrie and the nicely sliced apples into apple/blueberry pie filling and again freezing them in the shape of the pie pans.
Cannot wait to try it. I love this kind of stuff. And MOM comes Tuesday! So pies it will be.

I love apples! They are my favorite part of fall!
When I was expecting our oldest son a friend gifted me with bushels of apples. Since there wasn't too much else I could do being I was already past due, my friend and I made 23 apple pies and I don't remember how many bags of pie filling that I could use in many different ways.
That way I had lots of pie to offer to people who came by the house to see the baby and my holiday pie making was already done!

I also freeze the pie filling in the pie pan shape. Takes up less room and who needs all those pie tins?
