I have a bunch of green peppers (hatch too), but I wanted a snack while I was here cooking cheese that my husband could also eat. It only took about 10 minutes and it was delicious.
4 green bell peppers cutting the flesh into 1-1 and 1/2 inch pieces. Start frying that in a few tablespoons of olive oil. Fry it so it begins to soften and let some of them get a little brown on the skin part. When they are about half done, (10 minutes) spoon in a tablespoon of minced garlic and butter. Cook for 1 minute. Then put in 2 tablespoons of lemon juice, toss that around a minute. Then salt it well, toss it around and put onto a serving plate. I put a side of marinaded olives with it. Delicious.
This would be good mixed with or on the side of fried potatoes. or add some large pieces of onion with the peppers. Any kind of hot pepper is great made this way too. In Spain they serve hot or sweet peppers fried as a tapas.

Dh said he couldn't eat those as an appetizer or side. So I said, no problem, more for me. so the past 3 times he walked by the breadboard with the platter of peppers and olives, he stood there eating them, instead of getting a bowl of them. I reminded him he said he could not eat them. Hmmmmmmm!

Sounds good. We stir fry peppers a lot. We often stir fry a bunch of peppers with some other veggies like broccoli, cauliflower, celery, carrots, and onions. We mix the stir fry veggies with a homemade brown sauce made of low-sodium soy sauce, fresh ginger, garlic, and cornstarch. Finally, we mix the whole works with some brown rice Thai noodles and top with chopped peanuts and cilantro.
