I saw this recipe last week and held on to it, because we have all this stuff from the garden that needs to be used AND I'm eating meat free while Dh and Ds are eating meat and pasta w/anything.
Then I saw @jwal, s post and he was making 'end of the garden season foods' and that inspired me too.
My minestrone is what we have.
Olive oil garlic w/butter olive oil chopped chard chopped carrots chopped onions chopped potato 4 cups water with beef base
3 pints + of tomato sauce 1 pint of garbanzo beans 1 pint of pinto beans (edit)
2 pints of green beans 3 cups of green peppers
1/2 tsp oregano 1/2 tsp thyme 2 bay leaves 1/2 tsp black pepper salt to taste
I cooked the harder vegetables for a while, then the canned stuff and seasonings.
Now I'm making 2 lbs of macaroni and 1 lb of ground beef to have separate, so the guys can have the mac and beef with the soup on top.
Such a good time of year, cleaning up the gardens.
