Broth and walnuts for instance, could be blended up to use instead of oil. I tend to agree with this: www.youtube.com/watch?v=OGGQxJLuVjgIt's a video about olive oil. I have a stake in this, as I have high blood pressure and by removing all refined oils (and sugar and processed foods, animal products), the endothelial damage in my veins and arteries caused by oil/fat, will slowly heal. They will go from stiff and damaged, to pliable and able to constrict and relax. This was caused by all the fats I was eating. I used olive oil and butter. Now I use neither. Each 'hit' of oil/fat, damages the endothelial cells, so I want none of that anymore. I haven't used oil in coming up of 5 months. I'm seeing my blood pressure readings showing improvement. I've actually had many improvements in many different areas, of better sleep, less pain and stiffness, improved eye sight, weight loss slow and steady, increased energy, that I wouldn't add oil back if I was paid to use it. Your results may vary.

As for using no oil, you need some sesame oil for the flavour. It won't be the same without it. You could halve the oil and it would still be fine, since sesame oil is quite strong.
The thoom sauce is not mandatory. Whatever kind of salsa you like/can eat would work as well.

Oils from whole foods still contain nutrients, fiber, and minerals. Refined oils are calorie dense and contain little in the way of nutrition.

You can substitute tahini for the sesame oil. Usually sesame oil is from toasted sesame seeds, which damages the oil a bit. Tahini is just ground sesame seeds.
At least half if not more than half of vegetables have oil/fat of their own. In this recipe (which looks so great) there are 4 portabella mushrooms containing 1.2 grams of fat for all 4.

Tahini is made from raw sesame seeds and does not taste the same as toasted sesame. Not interchangeable! Sesame oil is for flavour not for nutrients or frying ability.
