We are over run with okra this year, l could count on one had the people I know that like okra. DW won't eat it. With a homesteading mind I could not just throw it away. I decided to dehydrate some as I like it fried. The dehydrated slices really make a good snack. I have not rehydrated. Any yet..will try some later.

Wally, my grandfather used to eat it boiled and that mucilaginous quality really turned me off. Then one day, I saw fried okra and was in hog heaven. LOVED the stuff, especially if I can have it with a nice ripe tomato.
I've dehydrated it too and it's good in soup.
At one time one of the fast food places offered "fried okra" that was batter dipped, not a cornmeal coating that I prefer. A neighbor who had grown up a city girl tried the fast food variety and pronounced it nasty. I couldn't vote one way or the other but told her that she'd not tasted fried okra until she tasted MY fried okra. I hadn't grown okra that year but as luck would have it, I was critter-sitting for another neighbor who had some in their garden that I was supposed to harvest in their absence. After I'd cooked some my way, the first neighbor was a convert to cornmeal coated fried okra. She still teases me about that.

I love dehydrated okra. I use it in soups/stews etc all year, until it produces again. Last year I ran out and I've been sad until my plants started producing this year. IMHO, it removes ALL the sliminess, even when rehydrated. Dehydrated and ground to powder is also a way I use it as a natural soup/stew thickener.

Love it dehydrated and sprinkled with fine kosher or sea salt before drying it....It is good cooked with rotel tomatoes and put over baked chicken patties....

If you check out Deep South Homestead on YouTube, they have a video on canning okra, that can be fried crisp at a later date. Does it work? I don't have a clue.
Keep wanting to give it a try...

Love okra, boiled, fried or pickled. Don't have enough to preserve. , Just getting 10- 12 pods twice a week. Hope it ramps up!!
