I love stuffed peppers. And a new OP variety I tried this year bore especially well. But there's only me here now, so making a big pan of them wasn't going to work. I'd be sick of them after the first few. So what's a person to do? I had a flash of inspiration. I made a huge pan of them, stuffed with rice and meat, and had a nice homemade tomato sauce ladled on top. Once they were baked nice and tender, I let them cool. Then I took a pair of wide tongs and started sliding individual stuffed peppers into wide mouth pints. Once they were all settled in jars, I ladled on the balance of the tomato sauce, and sprinkled with some grated cheese. I put on some used lids and bands, and put them in the freezer. Now I can pull out a single stuffed pepper and carefully nuke it. Another option would be to run it under cool water until the pepper slides out in a big iceberg, and reheat it in the oven again. I eat it hot, straight from the jar, and save on dishes. Mmmm!!! Rural fast food!
