1 pint homecanned pinto beans (or 2 cups cooked beans) 1/2 onion, chopped 1/4 cup butter 3/4 teaspoon sea salt 1/2 cup cheddar, shredded Pour jar of beans with liquid into saucepan (or cover leftover cooked beans with water) and bring to a boil. Strain liquid and mash beans. Over low heat add remaining ingredients and stir until heated through.

Never tried with butter, we have used lard or bacon grease..which of course makes it a heathy dish.

I have my kids singing my praises with how I can transform a can of pinto beans into the center point of a meal. Chopped onions, roasted red peppers, garlic, cilantro, lime juice and cumin. I think I will try mashing them next time. Thanks for the idea!

I use home cooked pinto beans, not refried or mashed, wherever refried beans are called for. Our favorite is 2 cups beans and 1 can of Ro-tel style diced tomatoes with chiles. Makes a great burrito.
