If you ever make a boiled beef tongue, do you save the broth to use as a soup base? I'm ready to peel the skin from the one I cooked today, and does it ever smell good My mom would just pour the water away once the tongue was cooked.

I would use it, like to make rice. I wouldn't use it as a soup because there are no bones in the tongue. I want my broth to have bone builders in it.

I decided I would make use of it, Maura. I chilled it in the fridge so I can skim the fat. I didn't use as much water as I remember mom did. I just covered it by about an inch and turned it a few times, so it's a lot more "broth" and less "cooking water". I have dried beans. I'll soak those for a while, then cook them in the broth, with some celery tops, an onion that needs using, a couple of bits of leftover vegetables.
