Some people like vinegar and some people aren't crazy about it.
Fig Vinegar, add figs to vinegar in the blender, blend, strain, and it is very nicely sweet and a little sour.
No waste pineapple cores, no extra cost. Pineapple vinegar <2 quarts of white vinegar chopped cores from 8 pineapples (added at different times)
I let this sit in jars for a few weeks, then poured the chopped cores and vinegar in the blender, then strained it. It is predominately a pineapple flavor with a little kick of vinegar. Even mr feather will like this one. I gotta say, I love it.
Pretty much any fruit waste can be used to flavor vinegar and tame its bite. Then we use it on salads, greens, potatoes, and in salad dressing. The sweetness of the fruit helps us avoid adding any type of sugar/honey/maple syrup.

Chive Blossom Vinegar Made some today. stuffed a pint jar with just cleaned chive flowers and then white vinegar. So far the vinegar is turning a beautiful violet color. How fun.
If it doesn't taste good I'll use it when making insect repellent by mogal.

I like lavender for a hair rinse and a raisin vinegar on salads. Next time I make bbq it will be with raisin.

I have made vinegar with dark red rose petals in it....Loved using it during the winter on salads, the aroma of the sweet petals infused into the red vinegar...

Three weeks till I taste it.

I'm pretty informal about making flavored vinegars for our own use. I store them in the pantry or fridge. I didn't know there were methods prescribed for more safety issues if I wanted to make some for someone else. But good to know. nchfp.uga.edu/publications/uga/uga_flavored_vinegars.pdf
