Well, just because I posted it doesn't mean I LIKE it.
I LIKE that they are providing information but I decidedly don't like that they are now going to say NO CANNING in whatever method is chosen, just because they haven't tested them with different methods (adding acid, pressure canning, etc).
I know it's a matter of funding/grants and politics and having time for professionals to do the testing, but in the mean time, the canners get jerked around told NO, and WAIT.
How do you feel about this?

Add a little citric acid?
We've been water bath canning elderberry jams and syrup for years with no ill effect. Not a recommendation, just our experience.

Ozarks Tom, I know, just treat it like you would any fruit juice. They need to TEST IT first, so maybe this is how they do 'job creation', create an important issue, then assign people, apply for grants, then in a few years we'll get approval from them? There was some mention of 'updating based on cultivars' of different fruits. Then there became an issue 3 years ago that all peaches are can-able but not white peaches because they are a higher ph than needed. They have also not been tested. In today's society with all the additional controls, new rules, about everything, this just rubs me the wrong way.

How do I feel about it? Something about the Nanny State and government intrusion... That's how I feel too. I guess we should thank God there are no canning police showing up at our doors to check the ph of our foods. In case we get too comfortable, the police can't tell the difference between pot and tomato plants, so know they may show up in your gardens.
