I've been reading about storing potatoes <50F and dark. I can't bury a trash can due to the water table, and we have no basement/unheated garage. Closest we have is a ground floor bedroom we use as a pantry where we do not open the heater vents - it's pretty cool in there. In that room, we have a closet where we store vacuum cleaner, etc. and that's a very dark, cool space. I'm thinking...a metal trash can in the pantry closet. Lined with straw, alternate potatoes & straw and put the lid on. It's convenient to just go to the pantry to get potatoes in bad weather and the metal can will keep out mice and varmints. Being in a cold room closet it is very cool and dark.
Concern: just doesn't seem like it allows for any air circulation -- is that a problem?
Seems like any storage that allows for air circulation means it has openings leaving it vulnerable to mice, etc.

I am awaiting others answers. We have very little cool space. I am drying some and canning. Plan on gifting some. IF it cools off, ours usually make it to xmas.

mzgarden, I think potatoes require fairly high humidity to store well. Wonder if you could use some slightly damp sand? I can't come up with a solution for the air circulation issue.
To be sure ours don't spoil, I usually can or dehydrate them. Big pain in the neck but better than spoiled potatoes.

I roast mine whole or a half with a little olive oil salt and pepper to just before done. I let them cool completely, bag them up, and they’re good as new. But we stores are cold room in the basement. On racks that you get when you buy a whole rack of marigold flowers at a nursery. That way they have airflow and I put a Large piece of brown paper over them

I store potatoes in my unheated wood shop. Took one cabinet, lined it with with foam board to keep it warmer. The only time the building is heated is when am working there. The building is quite well insulated, never seen it below freezing in the winter. They keep well in there until sometime in May.
