Been yrs since I had fried chicken breasts. Been baking them. I do boneless; skinless breasts. I dip in egg and then in potato flakes--gluten free. I bake at 425 deg. How can I get them to brown better? Bake at 425 deg.

I cannot answer your question, put my wife made "chicken" nuggets last night. She cut up a cauliflower into chunks. Then dipped the chunks in a batter made of chickpea flour, almond milk, and a variety of spices. The battered cauliflower were rolled in crushed cornflakes (you could also use Panko bread crumbs). Place on parchment paper lined cookie sheet.
Bake for 30 minutes (flipping once after 15 minutes) at 450ºF. The result was nicely browned and crispy "chicken" nuggets that were to die for!

Melissa, I wondered about that. Trying to stay away from all oils. Will give oil a try. Thanks.
