Lately I have run across a number of short videos of people doing "how to" for home pressure canning potatoes... Finely got that some, many are thinking there will be a shortage of spuds.. Have not found why they are believing this will be.. Will it be drought, lack of chemicals to control fungus, bugs for commercial growers ?? Not sure the thinking going along with this...
If you are a home canner, will you be doing potatoes ?? More potatoes than usual ?? Facts, details, thoughts, opinions ?? ??

I do not have an opinion about potential spud shortage, but given today’s unsettling situation it is certainly something to consider.
Rather than canning potatoes, I would dehydrate them! In the past I have had EXCELLENT results with dehydrating them.
I had a forgotten about a gallon glass jar of the crispy potatoes.
Not sure if they were still viable, I continued to ignore them for a few more years. Finally decided it was time to use them, or, toss them.
They were PERFECT! If I find a good deal on a sack of potatoes ~~~~ I will definitely be dehydrating again,

Tim Horton, We love canned potatoes. I only grow reds and yukons. The only pain is peeling them. SO cost effective and makes any meal a whiz as you open, smash, stir or use as is and can fry, bake or nuke!

We have a root cellar and we are able to keep fresh potatoes until the next crop is ready. We put them in the cellar last October and I still have a few crates to use. I did dig some new potatoes for the 4th.

I slice & dry: reds & russets. And I can close to 10 pints or more. I just used the last of the canned ones. It's a good way to keep them.

Tallpines, I just saw your post on using the dehydrated potatoes. Did you rehydrate them first when using them, and exactly how? I have a ton of potatoes to preserve now

I soak the dryed ones in some water before I use them...not too long just enough so they are soft.

I always can our small potatoes. They seem to go bad fast when I store them....so I can them. Love having canned potatoes, makes for fast meals. Add some canned beef and canned carrots and you have a quick stew....just heat and eat.
